Here is your weekly meal plan and shopping list!
This week, you’ll use broccoli twice, in both a broccoli soup and a beef and broccoli stir fry. For the stir fry, use whatever beef steak option is the most cost-effective. You don’t need much! If you would prefer and find it more cost effective, you can also make a chicken and broccoli stir fry instead; just substitute boneless, skinless chicken for the beef in the recipe.
Lettuce and tomatoes are listed in the tostada recipe, but we’ve also added some extra to the shopping list for topping your half-veggie burgers and for making a salad to accompany the soup. You’ll also have plenty of brown rice on hand, so you can feel free to add it to any meal this week as needed.
Please note that the recipes provided may serve different numbers of people. The shopping list is built from the recipes, so depending on the size of your family, you may need more or less of some ingredients. Remember to check the serving sizes before you shop so you can adjust your list to work for your family!
